Oolong tea, in general, falls somewhere between green tea and black tea in terms of oxidation levels. The oxidation process involves allowing the tea leaves to react with oxygen, which changes the chemical composition of the leaves and affects the flavor, aroma, and color of the tea.

Black oolong tea is more oxidized than traditional oolong tea, but not as much as fully oxidized black tea. The leaves of black oolong are partially fermented, giving the tea a complex and layered taste with characteristics of both green and black teas. The flavor profile can range from floral and fruity notes to toasty and honey-like undertones, depending on the specific type of oolong tea and the processing methods used.
